{"id":21974,"date":"2021-02-22T16:37:00","date_gmt":"2021-02-22T15:37:00","guid":{"rendered":"https:\/\/www.phytocontrol.com\/?p=21974"},"modified":"2026-03-13T14:40:55","modified_gmt":"2026-03-13T13:40:55","slug":"controllo-del-rischio-di-salmonella","status":"publish","type":"post","link":"https:\/\/stagingphytocontrol.shdesign.fr\/it\/notizie\/controllo-del-rischio-di-salmonella\/","title":{"rendered":"Controllo del rischio di &#8220;Salmonella&#8221;"},"content":{"rendered":"\n\n\n<p><b>Il laboratorio Phytocontrol ha sviluppato diversi metodi accreditati dal COFRAC per l&#8217;analisi qualitativa della Salmonella su una vasta gamma di prodotti.<\/b><\/p>\n\n\n\n<p>In Europa, <em>Salmonella <\/em>spp \u00e8 la seconda infezione zoonotica pi\u00f9 frequentemente riportata negli esseri umani e rimane <strong>la causa pi\u00f9 frequente delle epidemie alimentari.<\/strong><\/p>\n\n\n\n<p>La trasmissione all&#8217;uomo avviene principalmente attraverso il consumo di cibo crudo o poco cotto contaminato. La percentuale di trasmissione attraverso il cibo \u00e8 stimata al 95% per la salmonella non tipica e all&#8217;80% per la salmonella tipica.<\/p>\n\n\n\n<p>Gli alimenti pi\u00f9 a rischio sono le uova e gli ovoprodotti crudi o che hanno subito un trattamento termico insufficiente, la carne (bovini, suini e pollame), le piante, in particolare i semi germinati a causa dell&#8217;uso di fertilizzanti o di acqua contaminata, o di pratiche di raccolta e preparazione inadeguate, e i molluschi.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Normativa di riferimento<\/h3>\n\n\n\n<p>La salmonella \u00e8 un germe patogeno associato a criteri di sicurezza negli alimenti destinati al consumo umano secondo il <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=CELEX%3A02005R2073-20200308&amp;qid=1614791382201\" target=\"_blank\">regolamento 2073\/2005.<\/a> <br> In Francia, la <strong>FCD (F\u00e9d\u00e9ration du Commerce et de la Distribution) <\/strong>ha introdotto criteri aggiuntivi sulle matrici non elencati nel regolamento europeo.<br> <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=CELEX%3A02011R0142-20201208&amp;qid=1614791410276\" target=\"_blank\">Il regolamento 142\/2011 <\/a> stabilisce anche i criteri da rispettare per i prodotti alimentari destinati all&#8217;alimentazione animale. <br> La salmonella \u00e8 identificata come un pericolo ed \u00e8 controllata sull&#8217;importazione di certi prodotti da paesi terzi, in particolare sui semi di sesamo dall&#8217;India.<br> L&#8217;elenco delle matrici monitorate \u00e8 riportato <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/FR\/TXT\/?uri=celex%3A32019R1793\" target=\"_blank\">nell&#8217;allegato I del regolamento 2019\/1793<\/a>.<\/p>\n\n\n\n<p>Secondo l&#8217;ultima relazione annuale 2019 del RASFF:<br><\/p>\n\n\n\n<ul class=\"wp-block-list\"> <li>575 notifiche sono state riportate in alimenti riguardanti microrganismi patogeni, principalmente su prodotti di origine animale.
