{"id":26767,"date":"2022-04-19T16:40:00","date_gmt":"2022-04-19T14:40:00","guid":{"rendered":"https:\/\/www.phytocontrol.com\/?p=26767"},"modified":"2026-03-13T14:40:06","modified_gmt":"2026-03-13T13:40:06","slug":"control-del-riesgo-de-contaminantes-neoformados","status":"publish","type":"post","link":"https:\/\/stagingphytocontrol.shdesign.fr\/es\/actualites\/control-del-riesgo-de-contaminantes-neoformados\/","title":{"rendered":"Control del riesgo de contaminantes neoformados"},"content":{"rendered":"\n\n\n<p><b>Phytocontrol le acompa\u00f1a en la realizaci\u00f3n de sus planes de control para los productos transformados y es capaz de controlar la presencia de contaminantes neoformados de los procesos de transformaci\u00f3n.<\/b><\/p>\n\n\n\n<p>Ciertos m\u00e9todos de preparaci\u00f3n de alimentos causan la formaci\u00f3n de compuestos que pueden suponer un riesgo para la salud. Las principales sustancias neoformadas que se encuentran en nuestros alimentos son los HAP, las acrilamidas, el 3-MCPD y los \u00e9steres de glicidol.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Acrilamida, HAP, glicidol, 3-MCPD, un problema de salud<\/h3>\n\n\n\n<p><strong>La acrilamida <\/strong> es una sustancia que se forma naturalmente durante la cocci\u00f3n (reacci\u00f3n de Maillard), las matrices ricas en almid\u00f3n y el caf\u00e9 son especialmente afectados.<\/p>\n\n\n\n<p>El Reglamento (UE) n\u00ba 2017\/2158 de la Comisi\u00f3n, de 20 de noviembre de 2017, establece medidas de mitigaci\u00f3n y niveles de referencia para la reducci\u00f3n de la presencia de acrilamida en los alimentos.<\/p>\n\n\n\n<p>Los <strong>hidrocarburos arom\u00e1ticos polic\u00edclicos<\/strong> son contaminantes persistentes que se forman durante el proceso de cocci\u00f3n incontrolada o combusti\u00f3n incompleta de materia org\u00e1nica. La contaminaci\u00f3n de los alimentos puede producirse por deposici\u00f3n atmosf\u00e9rica (plantas), acumulaci\u00f3n en especies animales (carne, pescado) o durante la preparaci\u00f3n de alimentos con carb\u00f3n.<\/p>\n\n\n\n<p>El Reglamento (CE) n\u00ba 1881\/2006 y sus modificaciones sucesivas fijan los contenidos m\u00e1ximos de benzo(a)pireno y la suma de benzo(a)antraceno, benzo(a)pireno, benzo(b)fluoranteno y criseno en determinados productos.<\/p>\n\n\n\n<p>El proceso de fabricaci\u00f3n (refinaci\u00f3n) de grasas o aceites comestibles que contienen cloruros, puede generar la formaci\u00f3n de <strong>\u00e9steres de glicidol (GE), glicidol, 3-MCPD (3-monocloro-propanol-1,2-diol), y 2-MCPD (2-monocloropropanol-1,3-diol)<\/strong>.
