{"id":521666,"date":"2026-02-18T16:32:28","date_gmt":"2026-02-18T15:32:28","guid":{"rendered":"https:\/\/www.phytocontrol.com\/?p=521666"},"modified":"2026-03-13T14:38:08","modified_gmt":"2026-03-13T13:38:08","slug":"analysis-of-bacillus-cereus-and-cereulide-toxin-in-infant-formula","status":"publish","type":"post","link":"https:\/\/stagingphytocontrol.shdesign.fr\/en\/news\/analysis-of-bacillus-cereus-and-cereulide-toxin-in-infant-formula\/","title":{"rendered":"Analysis of Bacillus cereus and cereulide toxin in infant formula"},"content":{"rendered":"\n\n\n<p>In recent weeks, health news has been dominated by a wave of infant milk recalls and withdrawals in many countries following the detection of a toxin called cereulide, produced by Bacillus cereus.<\/p>\n\n\n\n<p>To address this health issue, the Phytocontrol laboratory is supporting manufacturers by analysing for the toxin cereulide in <b>liquid, powdered and reconstituted milk<\/b>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Why is this toxin a cause for concern?<\/h3>\n\n\n\n<p><i>Bacillus cereus<\/i> is a bacterium found in the environment (soil, dust, raw materials) that can contaminate foodstuffs, including milk preparations. Certain strains produce cereulide, a toxin that is particularly heat-stable and difficult to eliminate, even during the preparation or reconstitution of milk. This toxin poses a major risk to infants.<\/p>\n\n\n\n<p>\u00a0<\/p>\n\n\n\n<p>Recent cases have revealed that the toxin can be present in both the ingredient and the reconstituted product, making it difficult to detect without specific analyses.<\/p>\n\n\n\n<p>\u00a0<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Regulatory framework<\/h3>\n\n\n\n<p><b><i><u>Bacillus cereus<\/u><\/i><\/b><b><u>:<\/u><\/b> EU Regulation 2073\/2005 sets a process hygiene criterion for Bacillus cereus (presumptive) in powdered infant formula at 50 CFU\/g.<\/p>\n\n\n\n<p><b><u>Cereulide toxin:<\/u><\/b> The EFSA was asked to assess the risks associated with the presence of cereulide toxin in infant formula and to propose risk management criteria. It published <a href=\"https:\/\/efsa.onlinelibrary.wiley.com\/doi\/epdf\/10.2903\/j.efsa.2026.9941\">its opinion on 2 February<\/a> and lowered the ARfD for cereulide in infants to 0.014 \u00b5g\/kg body weight. It concluded that cereulide concentrations in reconstituted infant formula (liquid) above the thresholds below could lead to safety levels being exceeded:<\/p>\n\n\n\n<p>\u00a0<\/p>\n\n\n\n<ul class=\"wp-block-list\" type=\"disc\"> <li class=\"MsoNormal\"><span>0.054 \u00b5g\/L for infant formula (first-stage milk)<\/span><\/li> <li class=\"MsoNormal\"><span>0.1 \u00b5g\/L for follow-on formula (second-stage milk)<br><br><\/span><\/li> <\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">The Phytocontrol solution<\/h3>\n\n\n\n<p>In response to this issue, we support manufacturers, producers and authorities in controlling the risk of <i>Bacillus cereus<\/i> and the presence of the <i>cereulide<\/i> toxin in powdered and reconstituted milk.<\/p>\n\n\n\n<p>\u00a0<\/p>\n\n\n\n<p>Our analytical approach using LC-MS\/MS, adapted from the ISO 18465:2017 standard, guarantees excellent sensitivity, high robustness and optimised report turnaround times. <b>We have also targeted lower limits of quantification than the regulatory requirements for cereulide, reaching 0.020 \u00b5g\/L for liquid and reconstituted milk.<\/b><\/p>\n\n\n\n<p>In addition to the analyses, we support you through audits aimed at updating your Health Control Plan and your HACCP approach, taking into account emerging risks.<\/p>\n\n\n\n<p>\u00a0<\/p>\n\n\n\n<p>Need technical, regulatory or pricing information?
