Fosetyl-aluminium is a pesticide used as a fungicide to fight against various diseases on crops for human and animal consumption. This compound is rapidly transformed into phosphonic acid, which is regularly detected in poorly processed food matrices. The analysis of Fosetyl-aluminium and phosphonic acid mainly concerns two sectors: the fruit and vegetable sector and the wine sector, particularly organic wines.
